8 slices country Italian sourdough or other firm-textured bread
8 slices Deli style sliced mozzarella cheese
1/3 c. prepared pesto
4 large slices ripe tomato
2 T. olive oil

Directions:
Directions:
Top each of 4 slices of bread with a slice of chees. Spread pesto over cheese. Arrange tomatoes on top, then another slice of cheese. Close sandwiches with remaining 4 slices of bread.

Brush olive oil lightly over both sides of sandwiches. Cook sandwiches until bread is toastes and cheese is melted.
