1 c. flour
1 1/3 c. buttermilk
1 T. sugar
1 egg
1/2 t. baking powder
2 T. veg. oil
1/2 t. baking soda

1/4 t. salt

Directions:
Directions:
In a medium bowl, mix the flour, sugar, baking powder, baking soda and salt. In a small bowl, whisk the buttermilk, egg, and oil. Pour this liiquid into the flour mixture. Using a wooden spoon, stir just until combined.
Heat a 12 in. nonstick griddle over moderate heat and brush with a little oil. Using about 1/4 cup for each pancake, pour the batter on the griddle; cook for 3 minutes or just until covered with bubbles. Flip over and cook 2 minutes more or until golden.
Makes eight 4 in. pancakes.
