3/4 cup canned chicken broth
2 Tbsp. corn starch
2 Tbsp. sugar
2 Tbsp. soy sauce
1 Tbsp. wine vinegar
1/2 tsp. ground ginger
2 tsp. oil (preferably peanut oil)
1 chopped onion
2 medium garlic cloves, minced
1/2 tsp. red pepper flakes
1 lb. chicken breast, boneless and skinless, cut into small pieces.
2 cups cooked white rice, kept hot
Sesame seeds to sprinkle, if desired
Green onions or scallions, sliced to garnish, if desired

In medium bowl, whisk together broth, corn starch, sugar, soy sauce, vinegar and ginger; set aside.
Heat oil in wok or large skillet over medium-high heat. Add onions, garlic and red pepper. Cook 2 minutes. Add chicken and cook until browned all over, about 5 minutes.
Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 to 5 minutes.
Serve chicken and sauce over rice.
