1 pound lean ground buffalo (can substitute lean ground beef or ground turkey)
1/2 cup chopped onions
3/4 cup no-salt added ketchup
1 Tablespoon white vinegar
1 Tablespoon fresh lemon juice
1 Tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1 teaspoon paprika
1 Tablespoon brown sugar
6 whole-wheat hamburger buns

1. In a large skillet, brown the buffalo and onion over medium heat, stirring until meat is no longer pink (about 8 minutes).

2. Add remaining ingredients,(except the buns) to the meat mixture. Reduce heat to low and simmer for about 25-30 minutes until thickened - stir occasionally.

3. Assemble the meat mixture on the buns and serve.
