1/2 C butter
1C diced onion
1/4 C flour
8 C chicken stock
1 C cold water
1/2 C cornstarch
4 C instant mashed potatoes
1/2 tsp salt
1 tsp pepper
1/2 tsp basil
1/8 tsp thyme
4 potatoes, baked and cooled
2 C half & half
2-4 C diced ham
shredded cheese

Melt butter in large saucepan, add onion, and saute. Stir in flour, add stock a cup at a time, stirring well in between. Mix cold water and cornstarch; add to soup along with mashed potatoes and spices. Bring to a boil; simmer 5 min. Cut baked potatoes lengthwise. Scoop out and chop. Add potatoes, half & half and ham. Simmer 15 min. Dish out and sprinkle cheese on top.
