4-1/2 c. whole white wheat flour
3 c. sugar
1 large can pumpkin
1 tsp. salt
2 tsp. baking powder
2 tsp. soda
2 tsp. cinnamon
2 tsp. nutmeg
1/2 tsp. ginger
1 tsp. vanilla
2 eggs, beaten
1 c. oil (I reduce by 50% substituting applesauce)
1-1/2 c. chocolate chip cookies
1 c. raisins
1/2 c. chopped nuts

Directions:
Directions:
Mix flour, sugar and pumpkin together. Add salt, baking powder, soda, spices and vanilla. Beat the eggs and oil together. Add chocolate chips, raisins and nuts if desired. Dough is very moist. Drop by spoonfuls onto a greased cookie sheet. Bake at 350º for 10 - 15 min.
