1 cup regular white rice, uncooked
1 cup onion, chopped
1/2 cup butter or margarine, melted
1/2 cup seedless raisins
1 (4 oz.) can sliced mushrooms, drained
2 (10 1/2 oz.) cans beef consommé or beef broth
1/2 cup peanuts, chopped
1/2 cup celery, chopped.

Directions:
Directions:
Preheat oven to 350º
Lightly brown rice and onions in butter.
Combine rice mixture with all other ingredients and mix well.
Pour into a 2 quart casserole.
Bake uncovered at 350º for 50-60 minutes or until rice is done. Stir before serving.

You may omit celery, peanuts and/or raisins, but it is best with all three. Very nice with a special meal featuring beef.
