1 1/2 c. oats 1 1/4 c. flour 2 tsp. cinnamon 1 tsp. baking powder 3/4 tsp. baking soda 1/2 tsp. salt (optional) 1 c. unsweetened applesauce 1/2 c. firmly packed brown sugar 1/3 c. vegetable oil 1 egg white or 1 whole egg 1 tsp. vanilla 1/4 c. chopped nuts(optional)
Heat oven to 375º. Sift together the flour, cinnamon, baking powder, soda, and salt. Add applesauce, brown sugar, oil, egg white and vanilla. Mix just until dry ingredients are moist. Stir in nuts. Fill prepared muffin cups until almost full. Bake 20-25 minutes or until golden brown. Serve warm.
