1 T. vegetable oil
1 c. sour cream
1/2 c. dry breadcrumbs
1/4 c. milk
1 T. chopped fresh parsley
1 T. thinly sliced scallions
1 tsp. lemon juice
2 lbs. cod fillets
1/3 c. grated Parmesan cheese
1/2 tsp. paprika

Directions:
Directions:
Preheat oven to 400º. Pour oil into baking dish and heat in oven for 5 minutes. In small bowl, combine all ingredients except fish, cheese and paprika.

Pat fish dry - arrange in single layer on hot oil. Spread sour cream mixture evenly over fish. Sprinkle with cheese and paprika. Bake for 15 minutes, or until fish is flakey.
