1 20 oz. package mixed vegetables (corn, peas, carrots, green beans).
1 cup onion chopped
1 cup celery chopped
1 cup velveeta cheese cut into small cubes
1 cup mayonaise

Topping
1 stack Ritz Crackers
1 stick butter (1/2 cup)

Directions:
Directions:
Preheat oven to 350º. Cook vegetables until just tender. Drain but do not cool. In large mixing bowl combine vegetables, onions, celery, and velveeta cheese, mixing until cheese starts to melt. Add mayo, mixing well. Pour into 2 Qt. casserole dish. Sprinkle cracker crumbs on top, covering mixture. Drizzle melted butter on top of cracker crumbs. Bake for 25 minutes.
