2 tsp. baking soda
1 c. hot water
1 c. shortening
2 c. sugar
2 eggs
5 c. flour
3/4 c. unsweetened cocoa powder
1/2 tsp. salt
1 c. sour milk (see Note)

2 egg whites
1 tsp. vanilla
3 Tbsp.milk
4 c. confectioners' sugar
1 c. shortening

Preheat oven to 375 Grease cookie sheets.
Dissolve baking soda in hot water. Beat shortening, sugar and eggs. Sift flour cocoa powder and salt. Alternately add sour milk and flour mixture to shortening mixture, beating well after each addition. Stir in baking-soda mixture
Drop batter by teaspoonfuls onto prepared sheets. Bake t to 8 minutes. Cool
To make filling; Beat egg whites until stiff. Add vanilla, milk, and 2 cups confectioners' sugar. Add shortening. Mix thoroughly.
Spoon 1 Tbspl filling on the flat side of a cookie and top with another cookie, flat side to filling. Wrap in wax paper or plastic wrap. Freeze if desired.

Note: To make sour milk, add 1 Tbsp. lemon juice or vinegar to 1 c. milk. Let stand 5 minutes.
