cooking oil
4 boneless, skinless chicken breasts
1 can cream of chicken soup
1 1/2 C water
1 1/2 - 2 C uncooked white minute rice (using less rice makes it creamier)
1/2 pkg frozen mixed veggies (corn, pea, carrot mix)

Directions:
Directions:
Heat oil in skillet. Season chicken to your liking and cook until browned. Remove chicken. Add soup, water, salt and pepper and bring to a boil. Stir in rice and veggies and place chicken on top. Cover skillet and cook on low heat for about 5 min- until chicken is done.
