2 c. flour
1/2 t. salt
1 stick butter /\(1/2 c.) softened
1 c. powdered sugar
1 egg
1/2 t. peppermint extract
1/2 t. vanilla
8 ounces white chocolate, melted with 1 t. shortening
1/2 cup finely chopped candy canes

Directions:
Directions:
Stir together flour and salt in a medium bowl. Beat butter and sugar in a large bowl until smooth and creamy. Beat in egg. Beat in peppermint extract and vanilla. Add flour mixture and mix well. Shape dough into a ball and wrap in plastic wrap. Refrigerate 1 hour.

Heat oven to 375º. Spray cookie sheets with nonstick cooking spray. Shape dough into 1" balls for a total of 36 balls. Bake at 375º for 10 to 12 minutes or until bottoms are lightly browned. Transfer cookie to a wire rack to cool completely. When cool, brush with melted white chocolate; dip in chopped candy canes. Let harden on waxed paper.
