6 cups cooked rice
3-4 slices of bacon, fried and crumbled with grease reserved
3-5 Tablespoons Soy Sauce
½ bunch of green onions, chopped
1 ex-large or 2 small eggs, beaten
Directions:
Directions:
Cook rice according to package directions. While rice is cooking, fry bacon, reserving grease.
In large frying pan, stir cooked rice into reserved bacon drippings. Fry for about 2-3 minutes.
Add soy sauce until color is like you want it. Then add beaten eggs, stirring well until rice is evenly coated with egg mixture. Egg mixture will cook as you stir.
Stir in crumbled bacon and chopped green onions. Stir just until distributed evenly.

Serve warm. Makes 4-6 servings.

Variations:

Substitute small chunks of ham in place of bacon.
Add peas and carrots, or other veggies, if desired.
Bok Choy, nappa cabbage, celery, and sliced yellow onion make a nice addition.
