1 lb 90 % lean ground beef
one loaf seeded Italian bread
Locatelli pecorino romano cheese
salt
pepper
3 cloves garlic
dried parsley
2 eggs

Directions:
Directions:
In a colander, squeeze out the bread, soaked in water, until mush. Take out any lumps. Try to retain seeds, they add flavor. mix with the meat, eggs, cheese, and parsley,salt and pepper. Grate enough cheese to cover mix lightly, and mix really well and for a long time to get a fine texture to the meatballs. Shape into 2 in. meatballs. Brown garlic and meatballs in small amount of oil, and drain. Add to your favorite sauce and enjoy. If you want to brown them in the broiler for lower fat content, you can.
