(3) 12 oz packages thawed shredded hashbrowns
(1) 16 oz sour cream
(1) can cream of chicken soup
1 cup finely chopped white or yellow onion
1/2 cup butter - melted
Package shredded cheddar cheese
Salt & Pepper to Taste

Preheat oven to 350
Spray a 9x13 baking dish with cooking spray
Melt butter
In a large bowl, combine all ingredients
Spoon into baking dish, cook for one hour and the top is golden brown.

My sister-in-law, Laura Campbell, makes this dish for Thanksgiving and Christmas dinners. It feeds a large number of people, and is delicious. If there are leftovers they are excellent reheated for breakfast alongside bacon and eggs.
