2 C all-purpose flour
1 1/2 tsp baking powder
3/4 C sugar
1/2 C ( 1 stick) unsalted butter at room temp
1 tsp lemon zest
1/4 tsp salt
2 large eggs
3/4 c pistachios coarsely chopped
2/3 c craisins

Directions:
Directions:
preheat oven to 350º. Line baking sheet with parchment paper. Whisk flour and baking powder in a large bowl. In a separate bowl beat sugar,butter,lemon zest and salt together. Beat in eggs. Add four and mix until just blended. Stir in pistachios and craisins. Form into a dough 13 inches long and 3 inches wide on baking sheet. Bake 40 minutes.cool 30 minutes. Cut log diagonal into 1/2 to 3/4 thick slices. Arrange cut side down on baking sheet and bake until they are pale golden. About 15 minutes.cool. Can be stored in air tight container up to 4 days.©
