1 lb orzo pasta
3 T extra-virgin olive oil, plus 1/3 C
2 C fresh Arugula
3/4 C grumbled feta cheese
1/2 C dried Cherries or craisins
12 fresh basil leaves, torn
1/4 C toasted pine nuts ( just warm in dry pan over heat, be careful they burn fast)
3 T lemon juice
1 tsp salt
1 tsp freshly ground pepper

Directions:
Directions:
Cook pasta in salted water until tender but still firm to bite. About 8-10 minutes. Drain and spread on a large cookie sheet. Drizzle with 3 T of olive oil and set aside to cool. Once it is cool transfer to a large serving bowl and add the remaining ingredients ( add the remaining olive oil) and toss gently to combine.Serve.
