1 (4-oz.) can sliced mushrooms
6 large flounder
6 slices swiss cheese
1 large tomato, peeled and sliced
2 small onions, sliced
2 T. melted butter
1 1/2 T. flour
1 c. half'n'half
salt
hot rice

Directions:
Directions:
Drain mushrooms-reserve liquid, add water to make 1/2 c. Sprinkle flounder on all sides with salt. Starting at wide end roll up each fillet. Place seam side down. Place Cheese slice topped with tomato slice on each fish roll. Saute onions and mushrooms in butter, stir in flour, salt, half'n'half, mushroom liquid and bring to a boil. Pour over fish. Bake at 400º for 20 minutes. Serve over rice.
