5 lbs of potato's (about 20 medium in size)
1/2 cup of chopped red onion
3 stalks of celery - finely chopped
1 dz of hard boiled eggs - chopped
1 medium size jar of mayonnaise
1 tbl of yellow mustard
sweet pickles (this should be equal to the amount of celery) - dice them up
salt - pepper - paprika (to taste)

Cook potato's until tender - let cool
In a large bowl start with a layer of celery, onion, pickles, potato's, eggs and continue with these ingredients until all these ingredients are in the bowl.

In a small bowl mix together the mayonnaise, mustard, a little pickle juice, and salt and pepper.

Mix the small bowl into the large bowl. Toss together. Slice up to three eggs on top and layer across the top of the potato salad and sprinkle with paprika.
