"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste
This recipe for Cajun Corn, by Mimi, is from The Meredith Family Cookbook Project,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
In a mixing bowl, combine corn and eggs. Stir sugar into flour and add to corn mixture. Stir in melted butter. Pour into well buttered baking dish and bake for about an hour at 350º until nicely browned - may jiggle just a little. Set aside to let set up for about ten minutes before serving.
