1 medium potatoe, peeled & diced
1 1/2 c. water
2 pkgs. active dry yeast
1/2 c. warm water
1 c. warm milk
2 tbs. butter softened
2 tbs sugar
1 tsp. salt
6 1/2 to 7 1/2 c. flour

Directions:
Place potatoe in 1 1/2 cu. water in a small saucepan. Bring to boil. Reduce heat; cover and simmer until very tender. Drain, reserving 1/2 c. liquid. Mash potatoe; set aside.
In a large mixing bowl; dissolve yeast in warm water. Add the milk, butter, sugar, salt, 4 c. flour, potatoes and served cooking liquid; beat until smooth. Stir in enough remaining flour to form a stiff dough. Turn onto floured surface; knead until smooth and elastic, about 6 - 8 min. Place in greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch down dough. Turn onto floured surface, divide in half. Shape into loaves. Place into 2 greased 9 x 5 loaf pans. Cover and let rise until doubled, about 30 min. Sprinkle with additional flour.
Bake 375º for 35-40 minutes or until golden brown.
