1 1/4 c. whole wheat flour
1 1/4 c. toasted and ground steel-cut oats
1 tsp. salt
2 tsp. baking powder
1/2 tsp. baking soda
1 c. mashed banana (about 2 bananas)
2/3 c. honey
1/3 c. milk
1/3 c. vegtable oil
1/2 c. chopped toasted pecans

Directions:

Heat oven to 350º
In bowl, whisk together whole wheat flour, steel oats, salt, baking powder, baking soda.
In large bowl, stir together mashed banana, honey, milk & vegtable oil.
Incorporate dry ingredients into banana mixture in batches. Stir in chopped pecans.
Divide batter evenly among 8 greased mini loaf pans. Bake 30 mins.
