1 tsp. each salt & thyme
1/2 tsp. each pepper, garlic, rosemary
1 - 3 lb. boneless pork-loin roast
2 tbs. olive oil
4 red and/or green apples, cored and cut into 8 wedges
1 can apple juice,5.5 oz,

Directions:
Directions:
Heat oven 425º
In bowl, combine first 5 ingredients. Place pork on rack set in roastin pan. Drizzle with oil; coat with herb mixture. Roast 20 min.
Add apples, roast 20 min. Or until meat thermometer reaches 160º. Remove; transfer pork to platter. Stir apple juice into pan
Place roating pan over med high heat. Cook 10 min. Slice pork and serve with apple mix.
