2 T. active dry yeast (2 packages)
3/4 cup warm water
2 2/3 cups warm water
1/4 cup molasses or honey
1 T. salt
3 T. butter
5 cups whole wheat pastry flour
4 to 5 cups whole wheat or mixed grain flour

Directions:
Directions:
Put yeast into 3/4 cup warm water. Mix together water, molasses, salt, butter and 4 cups flour. Mix in the yeast mixture. Add more flour as needed. Knead for 10 minutes until soft and smooth. Put into a greased bowl, cover with a towel and let sit for an hour. Then knead the dough down, and make into 3 loaves, and put into greased bread pans. Let set until doubled in size. Bake at 350 for 30 minutes. Take out of pans, butter tops of loaves, and cool on a rack. Enjoy!

We make this bread every chance we get. I love to use different types of whole grain flours, like spelt, buckwheat, flax, etc to add flavor and nutrition.
