1 cup whole wheat pastry flour
1/4 cup sucanat or sugar
4 tsp baking powder
3/4 tsp salt
1 cup yellow or blue cornmeal
2 eggs
1 cup milk or almond milk
1/4 cup shortening

Directions:
Directions:
Preheat oven to 425.
Mix dry ingredients together. Add the rest of the ingredients. Beat with beater, just till smooth. (do not over beat). Pour into greased 9x9x2-inch pan, or a cast iron skillet. Bake at 425 for 20 - 25 minutes.
