1/2 c. snow peas
1/2 medium sweet yellow pepper
1/2 medium red bell pepper
1/4 daikon radish, scraped
3 c. finely shredded purple cabbage
3 T. lime juice
2 tsp. dark sesame oil
2 tsp. peeled, grated ginger
1/2 c. water
1 T. reduced-sodium soy sauce
1 tsp. cornstarch
1 T. sesame seeds, toasted

Directions:

Cut snow peas, peppers, radish into juliene strips and place in a large bowl. Add shredded cabbage, and toss gently. Set mixture aside.

Combine water, lime juice, soy sauce, sesame oil, and cornstarch in a small saucepan, stirring until smooth. Bring to a boil over medium heat; cook until slightly thickened, stirring frequently. Stir in grated ginger. Remove from heat and let cool for 15 minutes.

Pour mixture over vegetable mixture and top with sesame seeds. Cover tightly and chill at least 1 hour
