2-1/4 cup all purpose flour
1-1/3 cup granulated sugar
1 tsp baking soda
1 tsp salt
1/4 cup cocoa powder
2 eggs
1 cup buttermilk
1 tsp white vinegar
1 cup vegetable oil
2 T red food coloring
1 tsp vanilla
1 8 oz pkg cream cheese, softened
1/2 cup (1 stick) butter, softened
4 cups powdered sugar
2 tsp vanilla

Preheat oven to 350. Line 12 cup muffin tin with paper liners and set aside. In a bowl, beat the eggs; add buttermilk, vinegar, oil, food coloring and vanilla, beating until well combined on med speed.Slowly add the dry ingredients, mixing until combined. Pour batter into muffin cups, filling each cup 2/3 full. Bake 25 - 35 min until done. Cool in pan 10 minutes. Prepare frosting. In bowl, cream the butter and cream cheese on med speed. On low speed, gradually beat in powdered sugar until mixture is fluffy. Add vanilla. Spread a few spoonfuls of frosting on top of each completely cooled cupcake.

Everyone loves cupcakes, especially red velvet. The icing is a little different, but is like we get at "Sprinkles".
