Val's Rhubarb Bars Recipe

1 1/2 c. oatmeal
2 T. cornstarch
1 1/2 c. flour
1/4 c. water
1 c. margarine
3 - 3 1/2 c. diced rhubard
1 c. brown sugar
1 1/4 c. sugar
1/2 t. soda
1 t. vanilla
nuts (optional)
red food coloring if desired

Mix crust ingredients until crumbly. Pat 3/4 of mixture in 9x13 pan. Mix filling ingredients and spread over crust. Top with remaining crust mixture and bake at 350 for 40 minutes. Cool before cutting. These freeze well.
