1-1/2 cups Wesson oil
2 c sugar
3 eggs
3 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp nutmeg
2 tsp cinnamon
3 c coarsely chopped Granny Smith apples
1 c chopped walnuts
2 tsp vanilla

Directions:

Preheat oven to 325º.
Blend oil and sugar well with an electric mixer. Add 1 egg at a time, beating well after each egg added. Sift flour, baking soda, salt, nutmeg and cinnamon together into egg-oil mixture. Mix thoroughly. With a spatula hand stir in chopped raw apple and walnuts, stir in the vanilla. With the help of the spatula pour into a buttered and floured 10" tube pan. Place in oven for 1-1/4 hours, test with a toothpick for doneness.

Glaze: In a heavy pan add - 3 T. each of butter, brown sugar, granulated sugar and heavy cream, mixed with 1/2 tsp. vanilla, heat and boil 1 minute, then brush on top of cake, cool, then cut and serve.
Serve plain or with whipped cream sprinkled with a little nutmeg. Also nice with vanilla ice cream. ©
