1-1/2 tbsp olive oil
1 lb ground beef
2 cloves garlic, minced
1 medium onion, chopped
1/2 c Parmesan cheese, grated
1-4 oz can pimientos, drained and chopped
2 eggs, slightly beaten
1 egg yolk, beaten
1 tsp salt
3/4 tsp pepper
5 oz. each of Provolone cheese, boiled ham and Genoa salami, thinly sliced
2-9 inch pie crusts

Directions:
Line greased glass(optional) pan with your favorite dough for crust, leaving enough for top crust and decoration. Saute garlic and onion in oil lightly and then add meat, stirring until some of the pinkness is gone. Drain meat and add Parmesan, 2 eggs, salt and pepper, then toss till mixed and put into dough lined pan. Put three layers on top (in this order) of sliced provolone,ham and salami. Top with remaining crust, decorate with excess pieces, and brush with yolk. Bake at 350 for 40 minutes until golden. Cool to let settle about 10 minutes.
