8 oz. sausage
1 cup chopped onions
1 cup sliced celery
1/4 stick margarine
1 cup uncooked rice
1 8 oz can sliced water chestnuts, drained
1/4 teaspoon ground black pepper
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
2 tablespoons brown sugar, firmly packed
2 cups chicken broth

Crumble sausage into large over-proof skillet. Cook over medium heat, stiring, until browned. Drain and set aside. In the skillet, melt the 1/4 stick butter and brown the chopped onion and celery until tender but not brown. Add the rice, water chestnuts, pepper, allspice, cinnamon, brown sugar, and broth. Salt to taste. Bring to a boil. Cover, lower heat, and cook for 25 minutes or until liquid is absorbed. Remove from heat and let stand for 5 minutes. Serve hot. Great as a leftover.
