1lb. bulk italian sausage
1 lg. onion,chopped
5 oz. frozen chopped spinach, cooked and drained well
8 oz. cream cheese, softened
1 egg, beaten
2 cups shredded mozzarella cheese, divided
2 cups shredded cheddar cheese
1 cup cottage cheese
1/4 cup grated parmesan cheese
1/4 tsp. each of salt and pepper
1/8 tsp. cinnamon
Sauce
1 jar pasta sauce
20 jumbo shell noodles, cooked and drained

Directions:
Directions:
In skillet, brown sausage and onion; drain. Put in large bowl. Stir in spinach, cream cheese, and egg.
Add 1 cup mozzarella and all of the cheddar cheese, cottage cheese, parmesan cheese as well as salt, pepper and cinnamon. Mix well. Stuff shells and arrange in a greased 9 by 13 inch baking dish. Pour sauce over shells. Cover and bake at 350 for 40 minutes. Uncover and sprinkle with the remaining mozzarella cheese. Return to oven untill cheese melts. Enjoy!
