2/3 C. YELLOW CORNMEAL
1/3 C. FLOUR
1 C. BUTTERMILK
1 EGG BEATEN
1/3 C. FROZEN OR CANNED CORN
2 T. MELTED BUTTER(optional)
MILK OR WATER IF NEEDED

Directions:
Directions:
In a bowl mix cornmeal and flour with a wire whisk.
In a seperate bowl whisk together buttermilk and egg.
Gradually add wet ingred. to the dry with a fork. (Do
not overmix)
Fold in corn and butter. If batter is too thick, thin down with milk or water.
Heat pan and spray with Pam. Add batter in spoonfuls and cook about 2 min. per side. Look for bubbles all over surface and they are ready to flip.
Serve with honey or syrup. ENJOY!
