3 eggs
1 c. salad oil
2 c. sugar
2 t. vanilla
2 c. unpeeled grated zucchini
3 c. flour
1 t. salt
1 t. baking soda
1/4 t. baking powder
3 t. cinnamon

Directions:
Directions:
Grease & flour (2) 9x5x3" loaf pans or (1)10" flute.
Fluff eggs - add oil, sugar, and vanilla
Blend in zucchini
Add dry ingredients - Mix well.
Bake @ 350º for 1 hour.

This is Mom's recipe! It's best with raisins & black walnuts, but not all of us agree on that note.
