3 Eggs
1 C. hot Red Pepper sauce
2 C. self-rising Flour
1 tsp. Black Pepper
Special Seasoning (1 C. Salt, 1/4 C. Black Pepper, and 1/4 C. Garlic Powder which has been combined together-store in covered container for up to 6 months).
1 to 2-1/2 lbs. Chicken pieces

Directions:
In a bowl, beat the eggs and water together. Add enough of the hot sauce to the egg mixture so it is bright orange in color.
In a separate bowl, combine the flour and the black pepper.
Season the chicken by sprinkling it with the Special Seasoning.
Dip the seasoned chicken in the egg mixture, and then coat well in the flour mixture.
Heat the oil to 350º in a deep pot or fryer, Do not fill the pot more than 1/2 full with oil.
Fry the chicken in the oil until brown and crisp. White meat takes about 8-10 minutes and dark meat takes about 13-14 minutes.
