1/2 peck (4 qts.)green tomatoes

(1 peck=8 qts. & 4 pecks=1 bushel)

1 head cabbage
2 green peppers
1 red pepper
3 large onions
3 large cucumbers, or more
1/2 c. salt
1 1/2 qt. vinegar
2 - 4 c. sugar (or more to taste)
Mixed pickle spices (About 2 Tbsp.)

Directions:
Directions:
Grind green tomatoes, cabbage head, green peppers, red pepper, onions, and cucumbers. Sprinkle 1/2 cup salt over all. Let stand for 3 hrs. Then drain. Add vinegar, then 2-4 cups of sugar, and more to taste. Mixed about 2 Tbsp. pickle spices in a cheesecloth bag. Slowly cook for 1 hr. Pack hot and seal.
