1 3/4 c. flour
1/4 c. sugar
2 1/2 t. baking powder
3/4 t. salt
1 well-beaten egg
3/4 c. milk
1/3 c. salad oil or melted shortening

Directions:
Directions:
Sift dry ingredients into bowl; make well in center. Combine egg, milk, and oil. Add all at once till dry ingredients are moistened. Fill greased muffin pans 2/3 full. Bake @ 400 for 20-25 min. Makes 12.
(I don't sift--don't have a sifter. Takes 12 min.s for perfectly done muffins. You want to mix all the ingredients together well--I had a friend that barely got the dry and wet ones combined and they came out awful.)
