3 Tbsp. Minute tapioca
3 Tbsp. sugar
1 egg yolk
2 Tbsp. sugar
1/8 cup salt
2 c. milk
1 egg white
3/4 tsp. vanilla

Directions:
Directions:
Mix tapioca, salt 3 tablespoons sugar, milk and yolk in sauce-pan; let stand 5 minutes. Beat egg white until foamy; gradually beat in 2 tablespoons sugar, beating to soft peaks; set aside. Cook tapioca mixture over medium heat in a full boil, stirring constantly, 6 to8 minutes. Gradually add to beaten whites, stirring vigorously to blend. Add vanilla. Cool for 20 minutes; stir. Serve warm or chilled. Makes 2 3/4 cups or 5 servings.
