1/4 c. butter
1/4 c. green onion, chopped
1/4 c. flour
1 can chicken broth
12 oz. whole or 2% milk
2 large or three medium baked potatoes, cubed
cooked crumbled bacon and cheese for topping
salt and pepper to taste

Directions:
Directions:
Melt butter in large sauce pan over medium heat; add onion and cook until brown. Stir in flour; gradually; stir in broth and milk. Cook until slightly thickened. Add potatoes and heat throughly. Top bowl with bacon and/or cheese. (I mash one potato to thicken the soup.)
