3 c. flour
2 tsp. soda
2 tsp. baking powder



1 1/2 c. salad oil
2 c. sugar
4 eggs
3 c. finely ground carrots
1 c. mixed candied fruit, chopped
1 c. pitted dates, chopped
1 c. raisins
1 c. nuts, chopped (optional)

Directions:
Directions:
Sift together flour, soda, and baking powder; set aside. Combine salad oil and sugar. Mix well. Add 4 eggs, one at a time. Beat well after each addition until light and fluffy. Gradually add dry ingredients, mixing until smooth. Add ground carrots, mixed candied fruit, pitted dates, raisins, and nuts (optional). Mix well; spoon into 10 in. tube pan, or bake in loaf pans as desired.
Bake at 350º for 1 1/2 hrs (for tube pan) or until cake springs back when touched with fingers.
