8 fresh Salmon Fillets
Freshly Ground Black Pepper
3 T. Olive Oil
4½ tsp. Cornstarch
1¾ c. Chicken Broth
2 T. Balsamic Vinegar
1 T. Orange Juice
1 T. Brown Sugar
1 T. Orange Rind (grated)

Directions:
Directions:
Place the salmon in a 12x8x2 inch shallow baking dish. Sprinkle with black pepper and drizzle with oil. Bake at 350º for 15 minutes or until the fish flakes easily when tested with a fork.

In a 2 qt. saucepan over high heat, stir the cornstarch, broth, vinegar, orange juice, brown sugar and orange rind. Cook and stir until the mixture boils and thickens.

Place the salmon on a serving platter and serve with sauce. Garnish with orange slices.
