2 tbsp butter
5-6 potatoes, diced
1 can diced green chilies or 2-3 fresh Anaheim chilies, roasted, peeled and diced
1 large onion, chopped
5 cups chicken broth
1 8oz package shredded jack cheese
sliced green onions
sour cream (optional)
1 8oz package shredded longhorn cheese

Directions:
Directions:
Saute potatoes, chilies and onions in butter until tender. Transfer to soup pot and add broth. Cook until potatoes are tender. Just prior to serving, add cheese (reserving 1/4 c. of each) and mix gently until melted.

Serve topped with remaining cheese, green onions and sour cream if desired.
