1 c. Swiss Cheese
10 slices bacon, fried to crisp and crumbled (or leftover ham, dried beef)
4 eggs
2 c. light cream or evaporated milk
pinch each of sugar and nutmeg
generous dash of cayenne pepper
3/4 t. salt
1/2 t. black pepper

Directions:
Directions:
Preheat oven to 450º. Lightly butter the bottom of unbaked pie crust. Sprinkle in bacon and cheese.

In mixing bowl, combine eggs, cream and spices. Carefully pour over bacon and cheese.

Place in preheated oven and immediately reduce heat to 400º. Bake 12 minutes. Reduce heat to 325º and bake until knife inserted in center comes out clean, 25 - 30 minutes.
