Crust:
1/4 lb butter
2 c. cinnamon graham crackers
1/4 c. sugar (optional)

Filling:
2 lbs. cream cheese
1 1/2 c. sugar
1 1/2 tbsp lime juice
Pinch of salt
4 large eggs

Topping:
2 c. sour cream
1/4 c. sugar
1 tsp. almond extract

Crust:
Melt butter, combine ingredients. Press over bottom and sides of an ungreased 10" springform pan.

Filling:
In mixer, combine cream cheese, sugar and beat for 2 minutes or until soft. Add lime juice, salt and blend thoroughly. Add eggs, one at a time, beating at lowest speed to prevent air bubbles.

Pour filling into crust. Bake at 350 for 45 minutes. Remove from oven, but do not turn oven off, while topping is prepared (10 minutes).

Topping:
Combine sour cream, sugar and extract with a spatula in bowl. Spread over filling. Return to oven and bake at 350 for 10 minutes more. Remove and immediately place in refrigerator.
