2 tbsp of olive oil
1 bag of baby spinach leaves
1 small yellow onion, small dice
1 clove of garlic minced
1 lb. of ground veal
1/2 tsp of salt
1/2 tsp of pepper
1 cup of grated Parmesan or Romano cheese

Directions:
Place olive oil into deep skillet. Saute onions until translucent, add garlic cook a few minutes more. Add spinach leaves and cook down until soft. Remove from heat. Add ground veal, salt, pepper and mix thoroughly. Do not cook meat but let heat of cooked onion and spinach bind with the meat mixture. Put in cheese and blend.

Use about 1 tsp and fill the ravioli dough as you would with the cheese and follow same instructions for ravioli with light cheese filling in this book. Simmer for 5 minutes in low rolling boil. Will float to top when cooked. Fills Ravioli dough recipe.

When these are done. You can pour melted butter or olive oil with cracked pepper and more salt on them. They are also good with a marinara sauce and no matter what don't forget the fresh grated Reggiano Parmesan on top! Itsa so good!
