Ingredients:  
4 lg. tomatoes (peeled and chopped)
1 peeled cucumber (diced)
1 onion (diced)
1 green pepper (diced)
1 clove garlic (minced)
3 T. olive oil
3 c. tomato juice
3 T. red wine vinegar
Salt to taste
6 - 8 mushrooms (sauteed in butter and chopped)

Directions:

Combine all ingredients and chill overnight. Serve cold.
