1 clove garlic (minced)
1 strip anchovy filet
Dijon mustard
1 T. Worcestershire sauce
3 T. basalmic vinegar
1 egg yolk
1/4 c. extra virgin olive oil
Romaine lettuce (washed and
croutons
torn into bite size pieces)
Parmesan cheese (grated)

Directions:
Directions:
In a large salad bowl place minced clove garlic and finely chopped anchovy filet. Add dollop of mustard and crush together well. Blend in next three ingredients and mix well. Toss in lettuce and pour olive oil over top then mix well. Add croutons and sprinkle cheese over top. Serve immediately. If desired sprinkle with fresh ground pepper.

This salad was made this fresh many times at the table of restaurant patrons while I was a waiter in the hoity toity restaurants of Colorado and Utah.
