1 lb. whole dried yellow peas
3 qt. cold water
1/2 lb. salt pork
1/2 c. diced carrots
1/2 c. diced turnips
1 small white onion (chopped)
Salt and pepper to taste

Directions:
Directions:
Wash peas and soak for twelve hours in water with 1/2 tsp. baking soda. Rinse peas well and place in a pot with cold water and salt pork. Bring to a boil, skim and add the vegetables. Let simmer for four hours then add salt and pepper to taste. When serving garnish with finely chopped herbs or parsley.
