2 - 16 oz. cans sweet potatoes, drained
2 large apples, peeled, cut in 1/4 slices
1/2 c. dark seedless raisins
1/4 c. chopped walnuts or pecans (opt.)
1/2 c. honey
1/4 c. margarine
1 tsp. lemon juice
1/2 tsp. salt
1/8 tsp. ground cinnamon
1/8 tsp. ground ginger

Slice and layer in 1 1/2 qt. casserole - sweet potatoes, apples, raisins, and nuts. Combine remaining ingredients in saucepan. Heat until margarine is melted and mixture is well-blended. Pour over sweet potatoes and fruit. Bake uncovered at 350 for 1 hour.
